This super easy recipe can be used for any protein of your choice. Add to pasta noodles or noodles to have a complete meal for your family.
It can be easily adapted with any milk you have available. In this recipe I used a high protein low fat milk, but if calories aren’t an issue a decadent option is to use half and half or cream.

Ingredients
- 2 tablespoons of butter or EVOO
- 1½ Tablespoons of Flour
- ½ Red Pepper (cored and seeded and chopped)
- 3 Green onions ( chopped, green ends saved for garnish)
- 2 Cloves of Garlic minced
- 2 Cups of Spinach
- 2 Cups of Milk, or Half and Half
- 1 Tsp of Tony Chachere's Creole seasoning (may be substituted w/seasoning salt of your choosing)
- Black Pepper to taste
- ¼ Cup Parmesan Cheese
- 1 Chicken Breast (cooked and sliced thinly)
Instructions
- Melt Butter in Large Saucepan over medium heat, add flour and cook for 2 min.
- Add Peppers, Onion, and Garlic sauté for 2 mins or until vegetables begin to soften, add chopped garlic and spinach sauté until spinach begins to wilt.
- Add 2 cups of Milk, bring to a simmer under medium heat, stirring frequently.
- Add Creole seasoning and Black Pepper to taste
- When mixture begins to thicken add Parmesan Cheese. Simmer for additional 2 min under med,low heat.
- Add Sliced chicken and cook for 1 min to warm meat, remove from heat.
- For Noodles or Zoodles
- Make sure water is salted well and brought to a complete boil before adding pasta
- For Zoodles, using a spiralizer(found in any major grocery store), spiral cut zucchini. Sauté for 2 mins in EVOO and season with salt, make sure not to overcook zucchini noodles for best results.
