This easy alfredo sauce can be used with any protein of your choice. Pair with any pasta noodle or noodles for a complete meal for your family.
Ingredients
2 tablespoons of butter or EVOO
1½ Tablespoons of Flour
½ Red Pepper (cored and seeded and chopped)
3 Green onions ( chopped, green ends saved for garnish)
2 Cloves of Garlic minced
2 Cups of Spinach
2 Cups of Milk, or Half and Half
1 Tsp of Tony Chachere's Creole seasoning (may be substituted w/seasoning salt of your choosing)
Black Pepper to taste
¼ Cup Parmesan Cheese
1 Chicken Breast (cooked and sliced thinly)
Instructions
Melt Butter in Large Saucepan over medium heat, add flour and cook for 2 min.
Add Peppers, Onion, and Garlic sauté for 2 mins or until vegetables begin to soften, add chopped garlic and spinach sauté until spinach begins to wilt.
Add 2 cups of Milk, bring to a simmer under medium heat, stirring frequently.
Add Creole seasoning and Black Pepper to taste
When mixture begins to thicken add Parmesan Cheese. Simmer for additional 2 min under med,low heat.
Add Sliced chicken and cook for 1 min to warm meat, remove from heat.
For Noodles or Zoodles
Make sure water is salted well and brought to a complete boil before adding pasta
For Zoodles, using a spiralizer(found in any major grocery store), spiral cut zucchini. Sauté for 2 mins in EVOO and season with salt, make sure not to overcook zucchini noodles for best results.
