Halo Top Ice Cream is the new craze for those who follow macro conscious diets. This ice cream is high in protein low in calories. It has become so popular it often is hard to find, and sold out at most major retailers. Here is a homemade version, that only has 5 ingredients, and none of the conditioning additives found in most ice creams.
For all intensive purposes, the texture of Halo Top is similar to glorified ice milk. Nevertheless it HITS the spot when craving ice-cream. If calories aren’t a concern this recipe would be best suited with substituting 2 cups of milk with cream. This is NOT your standard custard recipe, that requires more milk fats that are present in heavy cream. This is a high protein, more macro friendly frozen treat. This easy recipe yields a whopping 10 servings. You could replace the Fairlife(high protein) whole milk with a lower fat 2%, but the texture would be significantly effected without the guar gums and additives that enhance the other ice creams. I.e., it would have a significant amount of ice crystals. To decrease carbs and sugars, part of the organic cane sugar could be replaced with stevia.

In this recipe I used a Food Processor to blend ingredients, how ever a countertop mixer would be sufficient.
Make sure to stir milk mixture frequently, to prevent curdling of mixture.
Make sure to freeze ice-cream maker insert overnight for best results. Add half of chilled mixture and blend until semisoft, then add remaining mixture and blend until entire mixture is semisoft texture. It helps to stop the ice-cream maker and scrap the sides 2-3time in the process. Freeze immediately.
Because no cream or conditioning additives were used, let sit for 1-2 min after freezing to soften before eating for optimal texture.
- 1 Cup Fresh Strawberries, Washed, stems removed
- 1 Cup organic Sugar, or Turbinado
- 2 TSP of Vanilla
- 4 egg yolks
- 4 Cups FAIRLIFE Whole Milk (can be substituted with any high protein milk)
- ¼tsp salt
- Puree strawberries and sugar until well blended, add Vanilla to mixture
- Add eggs and salt to sugar, strawberry mixture and blend on high for 2 min
- In a saucepan warm milk over low heat.
- Add1/2c of warm milk slowly to egg,sugar,strawberry mixture to temper.
- Add tempered mixture to saucepan of warm milk stirring continually. Cook until mixture coats spoon.
- Cool mixture in refrigerator throughly.(ideally overnight)
- Make sure to sufficiently freeze the ice cream makers insert (usually overnight) before making ice-cream.
- Add ½ of the chilled ice cream mixture to ice cream maker blend until it resembles soft serve ice-cream. Add remaining chilled ice-cream mixture. Blend until semisoft, freeze immediately.
